Chef's Rafa History
Chef Rafael Salines Catala worked alongside acclaimed Chef Julian Serrano at Tapas at the Aria Resort, Las Vegas, for a decade before establishing his own signature restaurant Jamon Jamon. From a small Ghost Kitchen that thrived during the COVID-19 pandemic, Chef Rafa expanded into his first brick-and-mortar location on Sahara. After three years of excellent service, (Jamon Jamon was consistently named in the Review Journal’s Best of Las Vegas Guides,) Chef Rafa was offered the opportunity to relocate his signature restaurant with an American twist at the beautiful Monument by Calico Ridge. The European architecture of the restaurant, with sweeping views from the outdoor terrace, reminds guests of Chef Rafa’s native home in Alicante, Spain, and has become an entertainment destination for Wedding Receptions, Foodie Retreats, and Lake Las Vegas/Henderson residents looking for authentic Euro-Cuisine.

Meet Chef Rafa Owner at JAMoN JAMoN
Chef Rafa was born in Alicante, Spain, a beautiful seaside region in the Southeast facing the Mediterranean Sea. The rich soil of the land’s farms and vineyards promoted a unique and savory flavor in the fresh vegetables and seafood there by the ocean. For young Rafa, who was interested in cooking at an early age, it was a match made in heaven. As a child, Rafa discovered his passion for food through the mouth-watering meals his mother and grandmother prepared daily. Experiencing every ingredient and scent that came out of his family kitchen sparked a love and dedication within him to become a chef. He studied at two of the best renowned culinary schools in Paris, France "L'enotre "& "Le Cordon Blue". After graduating, Chef Rafa worked at Michelin star-rated "El Maestral" (1 star) and "El Girasol" (2 stars.) His experiences motivated him to open his own fine-dining restaurant in Alicante, "Tragallum," which became Gourmand Bid Recommended and a Local favorite. After 12 years operating Tragallum, Chef Rafa was invited to work with Julian Serrano at Aria in Las Vegas. Today, Chef Rafa offers annual culinary tours to his native Alicante to share with select clients the gastronomy and culture that inspired the magic of Jamon Jamon.
